Hair is a magical ingredient featured on ABC's Once Upon a Time and Once Upon a Time in Wonderland. It first appears in the tenth episode of the first season.
History
Rumplestiltskin is visited by Robert, who needs his help finding a kidnapped James. Robert offers nothing in return, but states that he is willing to do anything to see his son again and apologize for his actions. This sentiment touches a nerve with Rumplestiltskin and he asks for a strand of Robert's hair as payment because "small things have great power". After using his crystal ball to locate the boy on Pleasure Island, he plucks a hair from the man's head. Once Robert is gone, however, Rumplestiltskin giggles about his own made-up reason for taking the hair before disposing of it. ("Murder Most Foul")
Rumplestiltskin becomes highly invested in creating a bottle of the ever elusive physical form of true love. Through one deal with Snow White, he creates what she desires, a potion of forgetfulness, and takes some strands of her hair, which he dips in the potion to tune it to her needs. He then accepts the hair that he took, as payment. ("7:15 A.M.")
Prince Charming is ensnared into a deal with Rumplestiltskin in exchange for information on Snow White's whereabouts. Rumplestiltskin takes Prince Charming's cloak as payment, but in truth, he picks off a strand of the man's hair. He places the strand with Snow White's hair in a bottle and watch as they entwine and glow. With that, he succeeds in creating the elusive and rare form of true love in a bottle. ("Heart of Darkness")
Seeking revenge, Jafar ransacks the Red Queen's chambers and takes a strand of her hair from a hairbrush. Then, he goes back to his lair to make a storm cloud with the hair, which he then releases into the air to track down and kill the Red Queen. Later, outside his lair window, he watches with satisfaction as the storm cloud begin to close in on the Red Queen's location. ("Home")
Mother Superior is working on a memory potion to restore Mr. Clark's Enchanted Forest memories, but lacks the final ingredient, the hair of someone who is living their past life. By using a strand of Pinocchio's hair, she is able to finish the potion. ("And Straight On 'Til Morning")
Rapunzel has been trapped inside a tower by a mysterious witch who is actually a manifestation of herself as her own greatest fear, as a consequence of consuming night root. During her captivity, her hair grows unnaturally long. One day, Prince Charming hears her cries for help and climbs up the tower using her long, braided hair as a scaling rope. Suddenly, the witch begins ascending up the tower using Rapunzel's hair. After revealing herself as Rapunzel's doppelganger, the witch telekinetically ties up the prince with Rapunzel's hair. Advised by Prince Charming to fend off the fear or risk dying alone, Rapunzel severs the length of her hair; causing the witch to fall from the tower and dissipate. ("The Tower")
Combining strands of both his hair and Belle's hair, Mr. Gold uses it on the magic globe to search for their son. The globe, at first, forms a dark shape of the continent, before losing its form and dissolving completely. This perplexes Mr. Gold, who realizes that his son cannot be found because he's in the Dark Realm. ("Wish You Were Here")
In the New Enchanted Forest, Rapunzel Tremaine is locked inside a tower by a witch named Gothel. After being imprisoned for six years, Rapunzel's hair has grown unnaturally long and she uses her hair to her benefit by cutting it off and strapping it to a hook so she can scale down the tower to escape. ("One Little Tear")

- The strands of hair that Rumplestiltskin pulls from Snow White's head in "7:15 A.M.", were rigged into Ginnifer Goodwin's own hair so the strands could be yanked out repeatedly.[1]
