I really don't think Henry "hates" Hook, partially because Henry's too nice to hate anyone, but I think it's the opposite; he loves him.
Remember in 4x10, Henry was under a curse, so nothing he said was true (I mean, you can argue it is, but then you have to say Charming hates Snow and thinks she had an affair, so....). And as for 6x06, you're right, it's normal. He was pumped to have Hook around and wanted to play video games with him, until Hook disrupted his routine (I know he had good intentions but he overstepped his boundaries) and he lashed out. And like you said, he is a kid, and at that, a kid who has gone through massive changes in his life. I was glad to see him let off some steam and get inside that pretty little head of his in 6x06 (I have said you could just as easily argue it was a Henry centric too).
But there's a lot of moments to show that Henry loves Killian, even if he doesn't outright say it.

I think to a certain extent what Henry (and, yes, David) said in 410 was true. The idea of the Spell of Shattered Sight seems to be that it eliminates the "filter" -- all of the darkest thoughts are left to run rampant. David certainly has wondered if Snow had an affair, but would usually go "Nah, she's better than that." The Spell of Shattered Sight removed his ability to see the good in Snow, so he no longer had any reason to believe that she had an affair.
Same with Regina. Part of her still blames (or at least blamed at the time) Snow for Daniel's death, but she is now able to go "I'm being ridiculous. Snow is a good person who made a genuine mistake." With the Spell of Shattered Sight, she was unable to see how Snow had the best of intentions, and once again began to despise her.
So what Henry said to Hook was true, but there was enough that he liked about him that he usually would not admit it. Once he could no longer see the things he liked, the things he disliked spilled out.

He just seemed annoyed and frustrated. That was pretty well spelled out imo

I agree with this.
I disagree because of this dialogue:
Elsa: They're their worst selves. It's like when Anna put me in that urn. She didn't mean what she said either, at least I hope she didn't.
Anna: I didn't.
I also just don't think that Charming would think that Snow had an affair, or that Kristoff hates Anna and doesn't want to marry her.
My understanding of what DNK said is that this is all the mean, petty, ashhole things they've thought in the very back of their head given light. David has had that Whale stuff in the very back of his mind since he found out about the one-night stand, if it ever pops into thought he immediately tells himself that the thought is stupid and goes on with his day. With the SS spell that thought he had once is right in there without the logic that would push that to the back of your mind. We can tell that the stuff was in the back of Henry's mind because he says stuff kind of like it in 606 when losing Emma is much more likely and he is a bit older.
