Physically stopping yourself from aging is much harder as we’ve only seen a few special cases, and whatever happened to Nook also fits somewhere in this equation, he youngified himself but that probably would have worked if he used Emma’s bloood.

Glamour is only an allusion, which does not affect the caster at all, only the world. Biologically, when you age, some of your organs begin to get out of order. Regina is more or less 50 years old by now without the Dark Curse. If she only glamoured herself, Regina wouldn't even run from a street to another like she does xD
Playing with aging (accelerating or reversing) may be difficult, but I don't think it's very hard to stop at your current age. I also do not see a difference between those I mentioned.
Not-aging ,or rather, not showing it, is not the same as immortality.
Not-aging simply means a being which does not show their aging process. This includes fairies, Pinocchio, Gothel, Fendrake, Regina, Seraphina, inhabitants of Neverland, victims of the Dark Curse etc.
Immortality in OUAT, however, means a being which is very hard to kill with only certain weopons. Like the dagger for the Dark Ones, and Olympian Crystal for deities (and probably for also Dark Ones). They also have the ability of unaging.
I doubt it's hard for magical people to magic themselves to look young, as lots of people used it.
They live in a fictional world, or rather worlds. So, I wouldn't recommend to adapt our world's systems into OUATverse, not even the LWM.
Maybe, Christianity in EF (which exists) is different than the real one. Maybe religions actually support same-sex relationships. Because as I said, it's a fictional universe. They can do whatever they want.
Even though I live in a country in which the most of the population are Muslims, I surely know that there are tons of churches of Christianity which perform same-sex weddings. But I won't tolerate this "Alice and Robin won't have children so they're gonna be unhappy", or "Their marriage is not valid since they are LGBT". There is enough hate in the world, let's just not move them into a fictional one.
I don't get the point of this discussion. Who cares if they got married in a church or not? Or that the "God" or the "Gods" recognize their marriage? They are happy, and that's what is important.
Glamour is only an illusion, which affects world, not the caster at all. So when we see "Marian", we actually see Zelena, since Zelena is always Zelena. And as Regina said once, she didn't feel different when glamoured as "Wilma", so that also supports that.
The character galleries are NOT actor galleries. Gothel used a glamour spell to illude the world so that everyone (including us) just thinks they see Rapunzel. However, as in show's perspective, Gothel didn't shapeshifted at all. She was always in her true form.
For example, Gothel's disguise as Rapunzel pics must go to Gothel gallery, whilst no pics should go to Rapunzel. That's what I'd like to suggest.
To say nothing of the Worse Place, which we never even saw. There definitely seems to be no escape from that.
I like your theory. But as I said before, we're not here to discuss our theories. You're saying we shouldn't include Afterlifes, NW and DW. Seems reasonable enough. But only "seems". We cannot debate what world to include by ourselves. We didn't see Netherworld, but who knows? Maybe it is already there and we just didn't happen to see it.
